Ordering long eggs from a restaurant? You’ve thought the chef is meticulously cutting each egg into perfect slices, leaving out the ends. Chances are you’re not alone; most people assume that as well. But this European delight goes through an extensive process before it makes it to your dinner table— and no, there’s nothing wrong with either end of its shape! There’s just one factory in Denmark responsible for making these coveted items: Dansk Andels.
When you crack a hard-boiled egg the yolk usually spills out, but not this one. The eggs form a perfect cylinder and I have no idea how!
Even if you try at home, the egg never comes out remotely close to what it should be like. The slices are not even the same width!
To perfectly hard-boil an egg, you must cook it just right. Cooking the yolk to the exact consistency is also a challenge because once cut into slices, your eggs begin to fall apart.
A plant in Roskilde, Denmark is exporting its long eggs all over the world. West of Copenhagen, 300 employees use up to 2,500 eggs per day!
The eggs are cleaned and sorted, then they’re lifted into the machine where a device breaks them.
The egg yolks are separated in one tank and the whites go into another.
This process is worth it, as this factory sold over 220,000 long eggs in Europe last year; an impressive feat considering half of them were purchased by Denmark alone.
The whites boil in a mold until it is white.
Once the egg white has hardened, the yolks are stirred and poured in.
The long eggs are frozen, then inspected to confirm they came out perfectly.
The eggs are delicately sliced with a machine that can produce 500 of them in an hour. This product is then sold to restaurants and hotels across the world, including Scandinavian Airlines!
The workers inspect the eggs, examining each one carefully to make sure they are cooked and shaped just right.
The cooperative company “Dansk Andels” was created by 300 egg producers in Denmark.
The long eggs are packaged in a box that holds 10 packages of 40 slices.
Voilá! All that work to get the perfect, long eggs. They’re sliced for you and on display- have we made your mouth water?
